Delicious Buttermilk Scones

When you want to satisfy your sweet tooth, and want something not too sweet, a little buttery and easy to whip up, then look no further than a scone! Scones are tasty, warming and will satisfy your sweet tooth with out feeling guilty. Scones aren’t just for breakfast or to have with a cup of tea they are a great treat to bring to your next family gathering. Adults and children alike will enjoy them. Scones vary in shapes and sizes. Some are cut as triangles, circles or made in a round loaf, pre-scored prior to baking. Either way you slice it, it will be good.

Below is my go-to-recipe for easy scones. Buttermilk adds a nice tang, but if I am out of buttermilk, I will use whole milk. Mix up the the add-ins with dried fruit, nuts, citrus zest. Top with course sugar, or drizzle icing on top. Or, slather on some butter hot out of the oven. A supper nice touch is to serve them with fresh whipped or clotted cream and fresh berries. Recipe

2      cups all-purpose flour

1/3  cup granulated sugar

1 ½  teaspoon baking powder

½     teaspoon baking soda

¼     teaspoon salt

8     Tablespoons unsalted butter, chilled

½     cup buttermilk

1      large egg

1 ½  teaspoon vanilla extract

2/3  cup raisins or fruit

 

Preheat oven 400 degrees

In a large bow mix together flour, sugar, baking powder, baking soda, and salt

Cut the butter in ½” cubes and distribute over the flour mixture.  With a pastry cutter or 2 knives (cut like scissors) cut butter into flour mix until it resembles coarse crumbs

In a small bowl stir buttermilk, egg, and vanilla and add to the flour and stir until combined  

Stir in fruit 

With lightly floured hands, pat dough into 8” diameter circle and place on an un-greased backing sheet and cut the circle with a serrated knife into 8 wedges 

Bake 18 to 20 minutes or until lightly browned

Test the center with to make sure it comes out clean

 Cool on wire rack for 5 minutes

 

Enjoy warm or cooled.
